Have you ever wondered why do we actually celebrate pancake day? Well, we have the answer!

Pancakes are associated with Shrove Tuesday, the day that comes before lent.

This is because making pancakes is a way to use up rich foods such as egg, milk, and sugar, before the 40 days of lent!

When Is Pancake Day In The UK?

This year, Pancake Day is on Tuesday 16th February, so make sure you stock up on ingredients ASAP!

Every year, Pancake Day falls on a Tuesday, this is because of the period of time it marks between the start of lent and easter.

So, with that being said, let’s take a look at some easy vegan pancake recipes which are sweet and savoury!

Sweet Vegan Pancake Recipes

1. Light & Fluffy Blueberry Vegan Pancakes

This particular recipe is a super easy vegan pancake recipe that requires little time to make – a total bonus!

Is uses soy milk for the liquid (or another vegan milk substitute if you’d prefer), but we’d also recommend coconut milk for a creamier texture.

If you want to be extra indulgent you can cook the pancakes in vegan margarine such as Earth Balance, or vegetable oil.

Ingredients:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 cup of soy milk
  • 2 tablespoons sugar
  • 1/8 tablespoon of salt
  • 2 tablespoons of vegetable oil
  • 1 cup of blueberries

Method:

To begin with, sift the flour and combine with the sugar, salt and baking powder in a big bowl and mix well.

Mix in your milk substitute and oil and beat together as you need to make sure the batter is nice and smooth!

Drop about a quarter of the batter at a time onto a well-greased frying pan and get flipping as soon as the bubbles appear in the pancake.

Grab your blueberries and scatter them on top of the finished pancakes and drizzle with maple syrup (there are a lot of vegan options) for some added pizzazz.

2. Vegan Banana Pancakes

Ingredients:

  • 1 large ripe banana
  • 2 tbsp golden caster sugar
  • 2 tbsp vegetable oil
  • ½ tsp baking powder
  • 150ml oat/soy/almond milk
  • ¼ tsp fine salt
  • 120g self-raising flour
  • Golden syrup
  • Sliced banana

 Method:

Firstly, you need to mash your banana into a mixing bowl and stir in the oil, salt and sugar!

Add the flour and the baking powder mix and make a well in the centre to gradually whisk in the milk, hopefully, it should be nice and thick now.

Ingredients:

  • 1 cup of plain flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 2 cups of soy milk
  • 1 tsp oil
  • Dairy-free butter
  • Fresh lemon, sliced
  • Sugar for topping

Method:

For this easy vegan pancake recipe, all you need to do is mix the dry ingredients together, whisk in the oil and gradually add the milk until the mix is completely smooth.

Next, grab your frying pan and heat it up on medium heat, melt a small amount of butter into the pan and turn the heat down ready for your batter.

  • 1 cup of plain flour
  • 1 tbsp sugar

  • 2 cups of soy milk

If you’re more of a savoury lover as opposed to sweet, we’ve got you covered with this super easy savoury recipes! Let’s take a look:

1. Tomato & Mushroom Pancakes

Check out this dairy and egg-free savoury pancake that’s perfect for brunch, especially with a creamy tomato and mushroom topping!

Ingredients:

  • 140g white self-raising flour
  • 400ml soy milk
  • Vegetable oil
  • 1 tsp soya flour
  • 250g button mushrooms
  • 250g cherry tomatoes – halved
  • A handful of pine nuts
  • Chives
  • 2 tbsp soya milk or soya cream

Method:

Firstly, sift the flours and a pinch of salt in a blender and add the soya milk to make a nice, smooth batter.

Next,  heat some oil in your pan until it’s really hot and pour 3 tbsp of the batter in the pan until bubbles appear on the surface of the pancake!

Now it’s time to flip until the sides are nice and golden brown, repeat this process until you’re happy with the number of pancakes.

Time for the toppings now! Heat some oil in a frying pan, cook the mushrooms and add the tomatoes.

Finally, you need to pour in the soy cream/milk and pine nuts and cook until combined, spoon the mixture over the pancakes and scatter with chives – yummy!

2. Cheddar & Onion Vegan Pancakes

Another yummy savoury option for breakfast is some cheddar & onion vegan pancakes, packed with flavour!

Ingredients:

  • Ground flaxseed
  • Soy milk
  • Apple cider vinegar
  • Vegan butter
  • Flour
  • Cornflour
  • Baking powder
  • Baking soda
  • Granulated garlic
  • Salt
  • Vegan cheese
  • Spring onions

Method:

Use flaxseed and water as an alternative as eggs to bind the ingredients nicely for this recipe, and then mix them with water and set aside until it has a gel consistency.

Firstly, add all the dry ingredients and whisk, then mix in the flaxseed, buttermilk and melted butter and whisk again!

Secondly, Gently fold the cheese, green onions and seasoning (garlic, salt, pepper) into the batter and put your pan on medium heat.

Finally, when the pan has heated nicely, drizzle oil and scoop ¼ of the batter into the pan, once you notice bubbles in the pancake – it’s time to flip!

3. Savoury Veggie Pancakes

Have a go at this tasty eggless easy vegan pancake recipe is packed with veggies and very easy to make, here’s how you do it!

Ingredients:

  • 2 cups of plain flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 2 teaspoons of turmeric
  • 1 tablespoon of nutritional yeast (optional)
  • 2 cups of soy milk
  • 2 tablespoons of vinegar
  • Peppers (green, red, yellow)
  • Spring onions
  • Carrots
  • Mushrooms
  • Chillies (optional)
  • Fresh tomatoes


Method:

To make the batter, mix vinegar to the soy milk and let it stand for a few minutes.

Secondly, add all the dry ingredients for the batter in a bowl and pour in the soy mixture – remember to mix it well.

Next, In a pan, toss the mushrooms in a pan and fry, and then heat the other veggies in the same pan (on low heat.)

Pour the pancake batter and even it out on the vegetables so it covers them nicely, once it’s firm, you can flip!
