Cooking time: 60 minutes
Nothing says summer like a scrumptious chicken traybake with chorizo & peppers, what more could you want – right?
It’s a colourful dish with herby chicken thighs, spicy sausage and colourful veg, perfect for the summer.
Ingredients:
- 4 fat garlic cloves
- 1 tbsp fresh thyme leaves
- 4 tsp rapeseed or olive oil
- 8 chicken thighs on the bone (skin trimmed)
- Mixed peppers, halved and deseeded
- 140g piece of chorizo
- 20 pitted olives
- 200g cherry tomatoes
- 3 tbsp red wine vinegar
- Crusty bread, pasta, or potatoes
